Instructions for making rural bread
- Dilute the starter with 75 grams of water and set aside. (Or 125 g of starter 100% hydration)
- Mix in the flour, then add the remaining water, until a smooth ball forms. Cover with plastic wrap and rest for 30 minutes.
- Mix recipes and yeast (optional and rosemary), then add to flour balls (mixing with my bare hands first served me well). Once the dough has hardened, mix with the remaining butter for 9 minutes.
- Stir and add half of the salt.
- Once the ball of flour has passed the flat surface test, set it aside and cover it with plastic wrap until it doubles in size. For beginners, this took a few hours (4-6).
- Drain carefully, form a ball and cover for 15 minutes.
- Shape into ball, place on parchment paper, and cover until doubled in size (this takes about half of the first rise).
- Preheat oven to 525 degrees with a baking sheet, place a loaf of bread on the bottom rack.
- After cooking, cut the bread into pieces and sprinkle the bread with water and sprinkle with dry salt if desired.
- Pour 3/4 cup boiling water into a saucepan stirring the bread (still on parchment paper) with the crust and immediately reduce the temperature to 475 degrees. Be careful not to drip water on the stove window, otherwise the water will explode. The direct steam produced can be dangerous, so I use a long-necked vase.
- Bake until the inside thermometer reads 200 degrees (until the shell forms a crust (about 15 minutes)).
- Let cool completly on a rack. Don't cut them as the heat keeps rolling in and releasing moisture in a controlled manner.
- Dinner package option: Roll 80 grams of ball, then lift it up. We reduce the oven temperature to 450 degrees, sprinkle the bread with water and then salt. Bake for 15 minutes. Let cool on a rack 15 minutes before serving.
