  1. Blanch four pounds of lean chicken breasts in ice water at 35 °.
  2. Add 1/2 cup of salt, 1/2 cup of sugar, 1 tablespoon of chopped garlic and 1 tablespoon of chopped onion for 2 hours.
  3. Also for cooking, cut the breasts into 1.5-inch cubes.
  4. Separate the chicken cubes into two large zip lock bags and fry them at the same time. Soak both for 1 hour or more. Save the syriaca oil and pepper mixture for later cooking / coating.
